Chilli & Herb Parmesan Wedge Spice Mix with Wedge Whip Dip – A Flavor Upgrade for Any Potato Wedge

INGREDIENTS

Spice mix for wedges

  • Good drizzle of Olive Oil

  • 2 - 3 large pinches of Cracked Black Pepper

  • 3 large pinches of Sea Salt

  • 3 heaped tsp of Dried Oregano

  • 2 heaped tsp of Garlic Powder

  • 2 heaped tsp of Smoked Paprika

  • 1/2 tsp of Cayenne Pepper (or to your heat preferences - alternatively you could swap for chilli flakes)


Toppings for wedges

  • Handful of freshly chopped chives

  • Large handful of freshly grated parmesan


Wedge Whip Dip

  • 200g of Thick Cream

  • 1/4 Requeijão (Cheese Spread )

  • Large pinch of Cracked Black Pepper and Sea Salt

  • 2 tsp of Garlic Powder

  • 2 tbsp of Freshly chopped Chives


METHOD


Preheat your oven according to the cooking instructions for your wedges, and line a large baking sheet.

Add the wedges to a large mixing bowl. Be sure to pat dry your wedges to remove any excess moisture.

Drizzle a generous amount of olive oil over the wedges.

Add the salt, pepper, garlic powder, paprika, oregano and Cayenne/chilli flakes.

Using your hands or spoon thoroughly coat the wedges in the oil and spice mix.

Transfer to your lined tray and roast until crisp and golden.


While the wedges are roasting you can make your Wedge Whip Dip.

To a bowl add all of the dip ingredients and mix together with a fork or small whisk.

When fully combined cover and store in the fridge until ready to serve. Before serving the dip top with a little sprinkling of fresh chives.


Once the wedges are cooked to your liking transfer to your serving platter and sprinkle with the grated parmesan and freshly chopped chives.
