There’s something magical about a warm, homemade cookie - especially one that feels like it came from a grandma’s kitchen. I never got to taste any of my grandma's baked goodies, but if I could imagine it, these chocolate chip oat cookies are exactly how they’d taste. They’re crispy on the outside, and soft (almost cake like) in the center, perfectly golden at the edges, and filled with rich melting chocolate chips and hearty rolled oats.

This isn’t a handed-down family recipe, but it’s filled with heart. And sometimes, the most meaningful recipes are the ones we create ourselves - made from memories we wish we had, or the kind we’re building now.


This is the only cookie recipe you’ll ever need - seriously. No more waiting around for butter to soften or juggling complicated steps. This recipe starts by melting the butter right on the hob, which not only saves time but gives the cookies a rich, toasty depth of flavour. The result? Crunchy edges, a soft, cake-like center, and chocolate in every bite. It’s simple, dependable, and delivers perfect cookies every single time. Plus they bake in exactly 18 minutes.

INGREDIENTS - Makes 15 cookies

  • 300g of plain flour

  • 130g melted butter

  • 200g golden granulated sugar

  • 1x egg

  • Large pinch of sea salt

  • 1x tsp of bicarbonate of soda

  • 2x tsp of almond extract

  • 1/2 cup of oats

  • 1 cup of Milk Chocolate chips


INSTRUCTIONS


Preheat the oven to 190C and line a cookie tray ( preheating the oven is very important for the correct cooking time )

Add the butter to a small saucepan along with the sugar and melt on a low heat until fully combined and the sugars dissolved. Stir occasionally.

Once the butter and sugar are fully combined, remove from the heat and put to one side to cool slightly.

In a large mixing bowl add the flour, salt and bicarb, oats and Chocolate chips and mix together.

Now, add the Almond extract and egg to the melted butter and mix together quickly ( you don't want the egg to start scrambling ) and transfer to your flour mixture. Combine the ingredients together well. It can be a little crumbly so i find it best to thoroughly mix it (I find it best in a stand mixer using the paddle attachment )

Using a small cookie scoop divide your mixture into approximately 15 cookies.

Transfer to your lined tray and spread out evenly. These do not spread.

Flatten slightly with your fingers - not flat.

Place on the top shelf of the preheated oven and bake for 18 minutes.

Cool on tray for 1 minute before transferring to a wired rack and cooling completely.


Baking Tips for Perfect Cookies

  • Preheat your oven for at least 15 - 20 minutes

  • Do not over bake your cookies

  • Allow to cool on a cooling rack

  • Use unsalted butter and use good quality sea salt

  • Use the sugar stated in recipes

  • Use a cookie scoop to ensure more even sized cookies
